Le Tour de France Gastronomique: A culinary journey through French wines

Excellent food and well-chosen wines proved an irresistible combination at this year’s France Food & Wine Festival. The fifth installment of the annual celebration of French food and wine was this year a gastronomical adventure through different regions of France, with Manila Peninsula’s Chefs Freddy Schmidt and Sebastian Cocquery preparing a degustation cocktail to highlight the pleasures of perfect pairing.

Manila’s food and wine enthusiasts flocked to the Manila Peninsula’s Rigodon Ballroom on the evening of October 29 to sample Sommelier Selection’s choices of 24 wines, representing the country’s 12 wine-producing regions. The chefs were tasked with creating dishes to pair with the wines. Lining the ballroom were examples of how food and wine complement and heighten the eating experience, such as when the Le Chevalier 2006 (a merlot and cabernet blend from Bordeaux) was paired with grilled cote de boeuf and bordelaise sauce, while a fourme de Monthrizon cheese was chosen to go with the Cotes de Lechet 2008, a chardonnay from Chablis.

Selections from the Loire Valley, Burgundy, Alsace, Jura, Beaujolais, Rhone, Provence, Languedoc-Roussillon, and the Southwest of France were poured endlessly, with platters of cheeses, dried and fresh fruits and berries, cured and grilled meats, pastries and sweets.

Proving that a degustacion cocktail is a more exhaustive and enjoyable concept, the 5th France Food & Wine Festival lasted until late into the evening -arguably one of the best festivals Sommelier Selection has mounted. Photos by Johan Sy.
